Curcumin, the principal curcuminoid of the popular Indian spice turmeric, is obtained from the ground rhizomes of Curcuma longa L. Curcumin is a hydrophobic polyphenol compound that has been recognized as a naturally occurring yellow pigment and component of the spice turmeric.
