This is a book of recipes and suggestions to help those who are gluten intolerant to enjoy their food.
In this book, she has tried to help mothers, chefs, and restaurateurs to understand that even a tiny amount of gluten can upset the health of those, like herself, who ask for no gluten in their food.
She has heard that one in eighty people in New Zealand alone have this problem, so she has set about to help others.
When she dines out and asks for ‘no gluten, please, ‘ she knows that all the nice touches to the meal will be taken away, such as the gravy or sauces or the special breads, so she has included recipes for sauces, butters, and salsa to enhance any barbeque or lunch, breads and cakes, starters and dinners, drinks, and desserts
She has gathered and altered and created these recipes to help others like herself to enjoy food again.

Diana has, over the years, looked for ways of improving her health, having suffered from allergies of all types from hay fever to asthma and, more recently, food allergies. These have made her unable to enjoy life to the full. From eyes streaming, to wheezing and shortness of breath, to more recently abdominal pain, headaches swelling of the abdomen, flatulence, and diarrhoea. She believes that our health is our problem and that there is an abundance of qualified doctors and specialists and alternative practitioners who can help us, but most of all, we must become aware of our own bodies and how we feel in different situations and after eating certain foods. If we don’t feel well, we must think carefully about what we have just eaten or where we have been that makes us feel that way and avoid that food or situation, always looking for ways to have the best health we can.
Some lucky individuals seem to have great health always and brimming with energy, while others, like her, have to constantly search for ways to heal or improve their health.
Only recently she was told of a little girl with an unsightly skin problem, which doctors could only prescribe steroid creams to. This little girl had no friends and was constantly teased at school. Diana advised the mother to see an allergy specialist, which she did. The little girl was found to be gluten intolerant or unable to digest gluten, as well as having other food intolerances. The specialist also prescribed additional vitamins and minerals to add to her diet. This was two years ago, her skin has cleared up, and she is now a happy and healthy eight-year-old with friends.
Diana has written this book to help others like herself and the little girl to have a happier and healthier life.
