Lipases are ubiquitous enzymes which catalyze the hydrolysis of triacylglycerols to glycerols and free fatty acids. Due to their characteristics of enantioselectivity and regioselectivity and stability in organic solvents, they have gained importance in industrial applications. In this book, the authors examine the functions, synthesis and role in disease of lipases.
