Bicontinuous interfacially jammed emulsion gels, now commonly termed ‘bijels’ are a class of soft materials, in which interpenetrating, continuous domains of two immiscible fluids are maintained in a rigid arrangement by a jammed layer of colloidal particles at their interface.
