Food proteins and bioactive peptides play a vital role in the

Se-Kwon Kim, Ph D is a Senior Professor at the Department of Chemistry and director of Marine Bioprocess Research Center (MBPRC) at Pukyong National University in the Republic of Korea. He is the editor of the Handbook of Marine Macroalgae, also published by Wiley-Blackwell.
