Cellulase refers to a class of enzymes produced chiefly by fungi, bacteria, and protozoans that catalyze the cellulolysis (or hydrolysis) of cellulose. Cellulases are found in many fields, such as animal feeding, brewery and wine, food, textile and laundry, pulp and paper products.
